Counting speed is not arithmetic. It is recognising shapes, in a fixed order, with one check at the end that catches most of what you would otherwise miss. Here is the method, and a drill that fixes the three errors almost everybody makes.
Count every hand in the same sequence, every time, without exception:
The order is not arbitrary and it is not about arithmetic — addition is commutative, so any order gives the same total. It is about not losing your place. A fixed sequence means that when you are interrupted, or when a hand is complicated, you know exactly which category you were in and which you have already done. Players who count in whatever order the cards suggest are the ones who finish a hand and then say "wait, did I take the run?"
It has a second benefit: the last two categories are the two most commonly forgotten ones. Putting flush and nobs at the end, always, turns "did I remember nobs?" into a step you cannot skip rather than something you have to think of.
Count the starter as part of the hand, always. It belongs to everybody, including the crib. Counting your four cards and stopping is the single largest source of dropped points in cribbage, and it is entirely invisible to you — the number you reach is a perfectly plausible number, just the wrong one.
This is the most useful trick on this page and almost nobody is taught it.
We scored every possible cribbage hand — all 12,994,800 of them — and 80.7% score an even number. Only 19.3% are odd. The reason is structural: fifteens are worth 2 and pairs are worth 2, and between them they account for the large majority of all points in the game. Neither can ever make a total odd.

So: if you count an odd number, you must be able to point at the run, the five-card flush or the Jack that made it odd. If you cannot, you have miscounted — almost always a fifteen counted once too often or once too few. The check takes about a second and it catches a large share of real errors.

Fast counters are not adding faster. They have simply seen these shapes enough times to read the total off them. There are not many worth learning:

The run families are the ones that repay memorising, because they are where the large errors live. Miscounting a double run costs three or four points at a stroke — far more than the single point you lose forgetting nobs.
Fifteens are where the time goes and where the misses happen, because the number of possible groups grows fast. The trick is to stop searching at random and work in a fixed sweep:
A useful sanity check: a hand with no 5 and no ten-card is very unlikely to have many fifteens, so sweep it quickly. A hand with several 5s almost certainly has more than you first see, so slow down.
The traditional patter exists because it works. You say the running total, not the individual scores:
"Fifteen two, fifteen four, fifteen six, and a pair for eight, and a run of three for eleven."
Note that each phrase ends with the total so far, not the value of the thing you just counted. That way the last number you say is your score, and you never have to add anything up at the end.
Saying it out loud has a second purpose at a real table: it is how your opponent checks you. Under muggins a score you undercount can be claimed by your opponent, so a silent count is a count nobody can verify — and in club play it will be asked for.
Counting improves with repetition far faster than with reading, and the useful repetition is being corrected. The drill:
The calculator lists every fifteen, pair and run on its own line specifically so this drill works — a total alone tells you that you were wrong, which is not the useful information. Within twenty hands you will find you are wrong in the same three places every time. Almost everybody's three are:
Once you know which of those is yours, it stops happening within a week — because the fix is not "count more carefully", it is one specific habit. That is the whole value of the drill, and it is why it beats simply playing more games.
